Description
While some Slimming World bloggers have turned their passion for recipes into full-time businesses, others are doing it on a smaller scale, publishing independent e-books rather than hardbacks and Kindle versions on Amazon.
Among them is Rebecca Finley, who launched her cookbook, Bec’s Slimming Bites, with a mission to help people to realise that “healthy” doesn’t have to mean “boring”, “time consuming” or “tasteless”.
After all, she follows the Slimming World plan and, therefore, knows only too well that low-Syn food can still be mindblowingly good – even restaurant standard.
I’ve followed her on Instagram for a while and gave her Orange Chicken recipe a go a few months ago. It blew mind!
So, I bought the e-book. I was a little sceptical at first because I wasn’t getting a hard copy – it was all on-screen, on the Cookt website. But what I miss in ink and paper is more than made up for in the quality of the recipes.
The book, which had 41 recipes to begin with, now has more than 80 – and I get all the updates for free. You don’t get that with a hardback, do you?
As well as the Orange Chicken, my personal favourites are the Butter Chicken and the Korean Barbecue Beef (Bulgogi) – the first time I’ve ever cooked Korean.
Other highlights among the weeknight mains, fakeaways, sweet treats and sides include:
- Lasagne Carbonara
- Chorizo Stuffed Chicken
- Easy Calzone
- Chip Shop Chinese Curry
There’s also now a bonus recipes section containing even more mouthwatering prospects.
“As someone who’s always loved food,” says Rebecca, “I take inspiration from so many places – traditional home-cooked meals, based on what I ate growing up, and using tips and tricks I’ve learnt from my Grandma over the years (she’s an amazing cook).
“I’ve picked up a few tips and tricks on my travels, too. I studied German and Chinese at university and so spent a year in China and a summer in Austria, and was lucky enough to learn how to cook authentically from the locals.”
